What is your middle name? Would you change any of your names if you could? If so, what would you like to be called? Jessica is my middle name, No, I like my names

Soup
If you were a fashion designer, which fabrics, colors, and styles would you probably use the most? Oh gosh… considering I really have no style except for comfy at the moment I have no clue. I would probably use a lot of blues, and purples. Definitely some cashmere.

Salad
What is your least favorite chore, and why? All of them! Dishes. I absolutely hate the dishes.Main Course
What is something that really frightens you, and can you trace it back to an event in your life? Being buried alive. Yes, I remember watching this made for TV movie when I was probably about 10 or 11 and the girl was a college age girl that was kidnapped for ransom and buried in a homemade coffin that had oxygene only for 7 days. I believe it was based on a true story. Since then I am terrified of it. because of that I want to be cremated when I die.

Dessert
Where are you sitting right now? Name 3 things you can see at this moment. I am sitting on my bed. I can see Sophi because she is sitting with me watching Mickey Mouse cartoons, Jakes clothes that he wore to work in the drycleaning bin, and Giles our cat.

Baklava Recipe

As requested here is my Baklava recipe.

1 16oz. package phyllo dough
1 lb. chopped nuts (pecans)
1 c. butter
1 tsp. cinnamon
1 c. water
1 c. granulated sugar
1 tsp. vanilla extract
½ c. honey

Preheat oven to 350°. Butter the bottom and sides of a 9X13 inch pan.

Chop nuts and toss with cinnamon. Set aside. Unroll phyllo dough. Cut the whole stack in half to fit pan. Cover phyllo dough with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered. Sprinkle 2-3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. The top layer should be 6-8 sheets deep.

Using a sharp knife cut into diamond shapes all the way to the bottom of the pan. You may cut into 4 long rows and then make diagonal cuts. Bake for about 50 minutes, until baklava is golden and crisp.

Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer about 20 minutes.

Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. Do not cover tightly as it becomes soggy it is wrapped up.

Jake and I absolutely love baklava so I decided to spend the afternoon last Thursday making it. It was DELICIOUS!

Never Bored

I am never bored when staying home with Sophi. Today she had a lot of fun playing by herself and talking to herself and all her stuffed animals. I just love listening to her. I really can’t get enough of it. We had some boxes left over from Christmas and remodeling that are STILL sticking around… not happy about that but Sophi had so much fun being in her castle.

When was the last time you received a surprise in the mail, and what was it? Our Wedding Anniversary. Jake sent me flowers along with reservations to a hotel spa and dinner for that weekend.

Soup
If you could have a summer and/or winter home, where would you want it to be? Summer would be Prince Edward Island and Winter would be Hawaii

Salad
Pick one: pineapple, orange, banana, apple, cherry. Definitely pineapple. I love pineapple.

Main Course
Describe the nicest piece of clothing that you own. That is very tough. It would have to be my Landsend cashmere sweaters besides some evening dresses I have.

Dessert
If you could forget one whole day from your life, which day would you choose to wipe from your memory? St. Patti’s day in college. I had a little too much jack and thought I was going to die. I don’t remember that night so much.

Everybody will probably be doing this thirteen but I am going to do it anyway!

Maddi’s Thirteen Resolutions for 2008 that she will inevitably break in 6 months or less.

Get pregnant again
Finish remodeling the kitchen
Start remodeling the backyard
Go on vacation with Jake only
Keep in touch better with my friends from college and high school.
Continue to eat healthier
Sew and craft more
Join a mommy and me yoga class
Put more money into Sophi’s savings account
Go through my clothes and give to good will what I don’t wear
Keep my computer desk less cluttered
Spend more one on one time with Jake
